Color Isn't Plating — It's a Polyphenol Map

I'll confess something that makes me laugh at myself: I can be genuinely, unironically happy about a carrot.

I know that sounds like a line a rabbit would say. But it's my carrot, and I own it.

Here's how it went. For a while I was eating carrots hard — not on purpose, just that particular headlong way you fall into a thing after realizing it's sweet, crunchy, cheap, filling, and beautiful all at once. Orange ones, purple ones, every color. Until one day I caught my own reflection and noticed the faintest warm-orange cast to my skin, palms especially.

My first reaction wasn't alarm. It was a laugh. Because I knew exactly what it was — carotenemia. Carotenoids are fat-soluble; eat more than the body can use for a while and the surplus temporarily settles in the outer skin, tinting you the color of a mild sunset. Completely harmless, and it fades as you ease off. But it was also a very blunt text message from my body: enough, friend — you are not a carrot-processing machine.

I'm writing it down because it captures my whole relationship with colorful food a little too perfectly. I adore them. I love the crisp clean sweetness of a bell pepper, love the almost illegal deep violet a purple carrot reveals when you cut it, love purple cabbage, love dark leafy greens, love the strange-looking vegetables whose names I can barely pronounce. And I also have to hold myself back, regularly — because even a good thing has a dose the body can handle. Overshoot the fiber and you don't get healthier; you just put your gut on overtime for the day. That's very Foodna: we don't believe any single food is better in unlimited quantity. That's just laziness wearing a health costume.

But what actually fascinated me — and changed how I shop — was a different layer.

At one point I had an AI build me a "plant map." Not a nutrition table; a map of relationships. Which plant carries which class of polyphenols. What to eat before training versus after. Which ones need a little fat to be absorbed at all. Which release their good chemistry only with heat. Which, conversely, need to be chopped and then waited on. We went back and forth for a long time, and the map kept growing, until it became a base layer in my head that quietly updates itself.

And the first rule of that map is simple to the point of being romantic: color is more or less the plant wearing its chemistry on the outside.

The blues and purples — blueberries, purple cabbage, purple carrots, blackcurrants — that deep tint is mostly anthocyanins. The reds and oranges — carrots, peppers, tomatoes, squash — are the carotenoid family. The dark greens — kale, spinach, broccoli — carry chlorophyll, folate, magnesium, and the cruciferous world's peculiar glucosinolate system. Color isn't decoration. Color is information. Lay a plate of colors out and you are, quite literally, spreading a polyphenol map across your body.

And here the science has to stay restrained. Anthocyanins and the broader polyphenol class are studied in relation to oxidative stress and inflammatory signaling — note the hedge: linked to, may, not cures. They aren't drugs. The honest version is this: a long-run dietary pattern built on real, varied, colorful plants tends to give the body a continuous, gentle supply of antioxidant and anti-inflammatory signals — not a hero narrative starring one particular berry.

The two most practical details on that map are exactly the ones most people don't know — and they decide whether you actually use what you eat:

First, carotenoids are fat-soluble. Chew a carrot, a tomato, a pile of dark greens dry, and your absorption is genuinely limited; they need a little fat to form the micelles that ferry them across the gut wall. One study (Brown et al., 2004) found that the same salad eaten with full-fat dressing delivered significantly more carotenoid absorption than the fat-free version. Which is why I never eat the "healthy oil-free salad." In my eyes that's close to pouring the nutrition down the drain. I pour olive oil over the color not because it tastes good — though it does — but so the color can actually get in.

Second, color also tracks diversity, and diversity is itself a nutrient. The richer the range of plants in a diet, the more it tends to support a rich gut microbiome — different plant fibers and polyphenols feed different microbes. So the question in my head at the market isn't "how much vitamin is in this." It's "how many colors did I spread out for my body this week."

Which is why, when I say eat beautifully and you become beautiful, I mean it without a trace of shallowness.

Eat beautifully, become beautiful. It sounds shallow. I actually think it's science. Because the "beautiful" here was never about the surface of the plate — not the plating, not the filter, not the photo you could post. It's the state that comes from the inside out once the body has genuinely been fed: clarity, energy, an afternoon that doesn't collapse, the alive signal in the skin and the eyes. Color isn't plating; it's the plant wearing its chemistry on the outside. And when you eat that chemistry and actually put it to use, the body ends up wearing its state on the outside too.

That's the real close of this whole stretch of the journal — and the most honest version of why I built Foodna.

That plant map I talked out of an AI is a private luxury. It lives buried in a long thread only I can read and only I can use. The feeling in that instant should be — I just wrote my body a beautiful line of code.

As for the carrot that once tinted me the color of dusk — it's still in my fridge. I've just learned to give it the partners it deserves, and learned to stop, smiling, the moment the body says enough. That, more or less, is what desire looks like once it's grown intelligent.
