Pescatarian Isn't a Restriction — It's an Efficient Nutritional Architecture

Let me clear one thing up first, because people always get it wrong: I'm not the kind of person who refuses a piece of meat from some moral high ground.

If anything, I'm the opposite. I have a real curiosity about offal, about the regional and the strong-flavored. When I first landed in Madrid I spent a long time studying callos on the menu — tripe stewed with tomato and chorizo until it turns glutinous, a richness that has its own logic — and cocido, that slow pot of chickpeas and bone and several kinds of meat cooked down into a broth that I completely understand can console an entire city through winter. I don't think meat is something to be given up. I know it's good, and I know exactly why it's good.

So when I say I eat pescatarian, I've never meant a rule. The truer word is semi-pescatarian. When I have a choice, most of the time I reach for fish, for seafood, and rarely order red meat on my own. But I keep the flexibility — for travel, for a regional soul-dish worth the detour, for a bite that is genuinely non-negotiable. I won't miss it for the sake of a label.

That isn't restraint. It's a default I chose.

And the default was taught to me one meal at a time. I didn't adopt a theory and then obey it.

The switch actually flipped in Singapore, in a shop I went to nearly every week: DON DON DONKI. Other people go for the snacks. I went for the cold cases — those boxes of ready-to-eat Japanese sashimi: salmon belly, scallops, yellowtail. I still remember the gesture. You open a box, you do almost nothing, and the richness of fatty fish, the cold clean texture, and everything I knew about EPA and DHA all arrived in the same second. No flame to light, no waiting, no stack of pans to wash after. It was complete, direct, cold, clean.

After that I started noticing that fish never gave me only "protein."

Seafood is a strikingly dense source of complete protein — the essential amino acids all present, in good proportion, easy to digest. But what sets it apart from other proteins is the whole bundle it brings along without being asked: long-chain omega-3 (EPA and DHA), B12, iodine, selenium. These happen to be exactly the nutrients that are hardest to assemble day to day and most central to the brain and to metabolism. For someone who works with her head and needs training to actually take, the same complete protein from fish comes with a far wider bundle. Fish isn't a meat substitute; it's a more efficient nutritional architecture.

Every place I moved to afterward taught the same lesson in its own accent.

In Peru I met ceviche — citrus curing the raw fish to the exact edge of opacity, a clarity that is bright and almost electric on the tongue. The acid isn't a seasoning; it's a kind of cooking in itself: no heat, none of the fragile omega-3 destroyed, and the fish becomes a different texture entirely.

By the time I reached the Mediterranean, reached Spain, it had become nearly a structure for living. Boquerones sitting in vinegar and olive oil, half-translucent, salt-bright. A tin of sardinas en aceite, a tin of caballa, a jar of bonito del norte — good oil-packed fish and vinegar-cured fillets are the gift this sea leaves for people who are busy. The gesture of opening a tin is the same gesture as opening a box of sashimi in Singapore all those years ago: near-zero friction, and the return is whole.

Here I have to be honest about something people are reluctant to admit: meat is genuinely hard to cook well.

The heat, the cut, the doneness, and then a whole cleanup afterward — getting a piece of red meat to be safe and not overdone, flavored through and not dry, takes real attention and real time. It's not that I can't. It's that I ran the numbers and would rather not spend that attention every day. Fish is direct: at its freshest it's simply raw; a little quicker, a light sear; no time at all, and you open a tin of sardines. Its best answer is very often also its least-effort answer — and in my ledger that scores extremely high.

But I don't want to romanticize the tin past the point of truth. Canned isn't always better. Sodium can run high, oil quality varies, source and mercury both deserve attention — not all fish are equally clean, and the mercury in large predatory fish is worth taking seriously. The interesting part is that the answer hides in the small fish.

Sardines, anchovies, mackerel — small oily fish tend to be very high in nutrient density and comparatively low in mercury; they sit low on the food chain and haven't had the chance to concentrate as much. Better still are the little ones you can eat bones and all: not a vial of omega-3 oil but an entire food matrix. What goes in isn't just the fat — it's calcium, magnesium, potassium, zinc, iron, taurine, arginine, a whole structure arriving together. Which is why I never read a whole small fish as "a stand-in for an omega-3 capsule." The capsule is the oil. The little fish is the entire body the oil used to live in.

This is the layer I most wanted people to see when I built Foodna.

When you photograph a small plate of sardines, a few boquerones, it shouldn't collapse into a line that reads "fish intake." It should surface the whole set the meal gives back: complete protein, EPA and DHA, B12, iodine, selenium, and the minerals tucked into the little bones — a whole return stack. What you see isn't "I ate fish today." It's "I just deposited, with an almost costless gesture, a set of signals that are genuinely hard to assemble." And it's beautiful enough that you want to do it again — that's the point. A healthy default only stays if it's worth repeating.

So if anyone imagines pescatarian is a limit I've imposed on myself — it's exactly backwards.

It isn't what I've eaten less of. It's that I chose a structure with a higher return and lower friction, and kept the flexibility for the moments genuinely worth breaking it. I don't hand my body to randomness. Fish, for me, isn't a meat substitute; it's a more efficient nutritional architecture — and it happens, also, to be delicious.
