My Favorite Anti-Inflammatory Details Are the Delicious Ones

I don't like talking about spices as if they were medicine.

Turmeric isn't my prescription. Cacao isn't my supplement. Every time someone says, very earnestly, you should eat turmeric, it's anti-inflammatory, some part of me takes a half-step back — there's a flavor in that sentence I don't trust, a way of breaking food down into an active compound and then swallowing the compound like a pill, as though the entire point of that small yellow powder were to complete some medical task on your behalf. What I do is almost the reverse. I never went to these things for the anti-inflammatory anything. I fell for what they do to a plate first — how they make it taste better — and only later, slowly, noticed that the little things that make food delicious tend, quietly, to carry a bit of chemistry the body can use.

But piperine, the heat in black pepper, tends to raise curcumin's bioavailability substantially — this one is well-supported, the classic anchor being the Shoba human study from 1998, and the increase is large (though I won't hand you a memorizable multiple, because it swings hard by person, formulation, and dose; I'll only give you the direction: with black pepper present, the share of curcumin the body catches goes up). But the point I'm making isn't the pharmacokinetics at all. The point is: a genuinely good dish should already have black pepper in it. I don't crack pepper to activate the curcumin — I crack it because a pot of lentils, a tray of roasted cauliflower, a bowl of eggs, all warmed with turmeric's yellow and pepper's bite, simply taste better than the version without. The synergy is free. The turmeric goes into a dish I actually want a second bite of, not into a spoonful of anti-inflammatory powder stirred into water. That difference — second bite versus dutiful gulp — is exactly the difference between a thing that stays in your life and a thing that doesn't.

Garlic and onion, the same. That pungent base of theirs comes from a family of sulfur compounds, and when you cut or crush them and let them sit a moment before the pan, that flavor really opens — and it's precisely those sulfur compounds that are thought to run alongside some directions the body likes. But I have never once eaten garlic because of that. I eat garlic because a plate of Spanish gambas al ajillo, a pot of beans built on garlic and olive oil, collapses on one side without that aroma. Chili is the same — the small burn of capsaicin, the warm one of gingerol in ginger — they're delicious first, the flash of stimulation that makes a mouthful come alive, and only second are they the chemistry the researchers happen to keep an eye on.

The one I most wanted to save for last is olive oil, because it compresses this whole page into a single drop. Extra-virgin olive oil contains a polyphenol called oleocanthal, and it is that faint peppery sting a good oil gives at the back of the throat — drink a mouthful of something fresh and forceful and your throat catches, tickles, almost coughs, and that sensation itself is the compound. Here's the striking part: in the lab, oleocanthal inhibits the same class of enzymes — COX-1, COX-2 — that ibuprofen targets (the Beauchamp work published in Nature in 2005). Let me mark the boundary very carefully: this is a mechanistic observation, mostly in vitro, a similarity in structure and mode of action — it is emphatically not drinking olive oil equals taking ibuprofen, and it is not treatment for anything. But the beauty of it is exactly this: the throat-sting you chase for the sake of flavor, the very mark that makes a good oil a good oil, and the studied molecule, are one and the same thing. You can't pull the flavor apart from the chemistry, because they were never two things.

So look at what my table has become, these years in Spain: nearly every small move that makes the food taste better is, by happy accident, a detail I love for its own sake. A tin of sardines in olive oil — half a lemon squeezed over, a fistful of chopped parsley, a pinch of chili flakes, a thread of good olive oil, a little sea salt — and the fish goes from a tin of fish to a meal I actually want to sit down for; and that half-lemon, that parsley, that ring of oil, that chili, each one happens to carry something the body can use. They make the food more delicious, not more like a task. That's the core of this whole page and I'll say it more than once: the health details that actually stay in a person's life long-term are never the grim, teeth-gritting gestures — they're these small condiments that make every bite taste better. Because the joyless thing, you'll eventually stop; the delicious thing, you'll keep reaching for.
