I don't believe in the kitchen alone.

I lift. I sit in the sauna, I take the cold plunge, the ice water. All of that is in the rotation. It's just that of every way I've found to do my body a small favor, food is the most enjoyable, the most daily-doable, and the one hemmed in by the fewest outside constraints. The sauna needs a sauna room. The plunge needs a certain nerve in the moment. Training has to be scheduled. But a cutting board, one pan, and the order of a few minutes ask almost nothing extra of me. The only part that's genuinely hard isn't the doing — it's finding, inside a field that's noisy and often runs ahead of its evidence, a piece of knowledge that's both accurate and something I can act on today. That's the hard part. It always was.

The part of the research I anchor to steadily is this: chopping and waiting, or simply adding a pinch of mustard powder (which carries the enzyme itself), tends to raise how much sulforaphane you get — especially if you're going to cook it afterward, since heat can knock out the vegetable's own enzyme, and the mustard powder lends you a spare. Second move, a gentle reversal about starch: cook it, then cool it. Potatoes, rice — eaten hot versus eaten after cooling aren't quite the same thing inside the body. Deep-frying, searing a fillet to charred black, tends to degrade the very part I came for. So I never chase the "well-browned" fish. I want salmon barely cooked, or seared to just-set; boquerones cured in vinegar; sardines steamed, or simply a tin of sardines in olive oil, opened and eaten. This isn't a preference for bland — it's not wanting to burn off, with an overzealous flame, the most valuable thing in the fish.

The same logic runs to kefir, and here I'll be flat about it: kefir comes out of the fridge and gets drunk cold. Its worth is the crowd of live cultures in it, and heat kills them. So there is no such thing as warm kefir — the instant you heat it, all you're holding is a glass of tart liquid; the living part is already gone. On this one there's no middle ground.

Then two pairings, both a question of who stands beside what. Carotenoids — the crew behind the pretty colors of carrots, bell peppers, tomatoes, purple cabbage — are fat-soluble. For the body to catch them, they tend to need a little fat present in the same meal. So my tomatoes always get olive oil, and I rarely let carrots or peppers show up dry and alone — a little oil, or an egg yolk, is enough. Not for taste (though it's better for taste too), but so that mouthful of color actually gets used. The other line I've watched over and over on earlier pages: vitamin C tends to enhance the absorption of non-heme iron. So my plant iron — lentils, dark leafy greens — I try to keep lemon, bell pepper, tomato standing next to it. None of this is new knowledge. It's just putting it in the same meal, so the synergy actually happens.
