Eating It Isn't the Same as Using It

I used to think that eating enough was the same as absorbing enough.

Back then, when I looked at a food, I looked at what it contained. A plate of lentils contains iron, a handful of pumpkin seeds contains zinc — as if these minerals were labels printed on the ingredient, and the moment I ate it, the label transferred cleanly onto me. It was running my own blood panels, over and over, that made me admit something unromantic: a plate of lentils is not the word iron. The iron is really in there. But contained and used are separated by a whole stretch of road — absorption, competition, synergy, timing. The body isn't a checkout counter that receives goods against an ingredient list.
